Prepared by the catering students under the guidance of myself, this unique event showcases innovative techniques that transform everyday food waste into something delicious and motivating—nothing goes to waste.

    Savor a thoughtfully curated menu that highlights fresh, seasonal produce from local suppliers, ensuring every bite is not only flavourful but environmentally friendly. Join us in supporting the next generation of chefs while making a meaningful impact on reducing food waste.

    If you would like to learn how to improve your gut health, have some fun and connect with a
    sustainable and food waste-conscious community, this fermentation workshop is for you. We will help
    you to learn useful skills for keeping a happy and healthy microbiome. We will cover topics such as
    cultured condiments, lactic fermentation and dairy ferments. You will learn amazing skills used for
    thousands of years, that have been proven to keep you healthy, as well as reducing inflammation and food waste.

    Following the workshop, indulge in a 3 course lunch cooked by Rowen Halstead, a Michelin-trained chef who has a keen focus on zero-waste cooking and supporting a sustainable food system. Lunch will apply the ferments learned in the workshop as well as further ways you can utilise food waste in your homes. The menu is entirely vegetarian.
