Stale Bread Pasta
- 100g stale bread (any bread works, my favourite is old focaccia as it has all that extra flavour)
- 100g '00' flour
- 100g boiling water
1. Blend your bread into fine breadcrumbs. If it's not dry enough, whack it in the oven for an hour at a low temperature.
2. Pour the boiling water over the breadcrumbs, allowing them to soak it up, and mix it into a paste.
3. Add the flour. Mix together until a dough forms (it will look dry to start with but will come together). With bigger batches you can use a standing mixer, but it's easy enough with your hands.
4. Tip the dough onto a clean surface and knead for about 10 minutes until you get a smooth, soft dough.
5. The dough can be left to rest for 20-30 minutes to make it easier to roll, but it's not essential. Cover it with a damp cloth to avoid it drying out. If you need to prepare a sauce for the pasta, now is the best time to do so.
6. With a rolling pin or pasta machine, roll the dough thin and cut it into strips. You can let the pasta dry out and freeze it in a sandwich bag or Tupperware at this stage for a quick dose of pasta at a later date.
7. Cook in salted boiling water for about 2 minutes (3-4 minutes if dried and frozen). Drain well and serve with whatever sauce you wish!
